30 years in the baking
Three decades of baking, two major disruptions, one enduring providore: this is the story of Brisbane institution Jocelyn’s Provisions.
1996: THE JAMES ST BEGINNING
In a tiny shop with a small adjoining kitchen, Jocelyn’s Provisions opens in what was then a light industrial neighbourhood with a simple approach: cook generously, use excellent produce, and make food people want to come back for.
2000s: A FAVOURITE FROM DAY ONE
Come the 2000s, ‘Jocelyn’s’ is a thriving neighbourhood staple, becoming a byword for quality and known for its daily line-up of sweet and savoury baking. The lamb and rosemary pie, first made in 1996, remained a bestseller (to this day), while its bar cakes became a go-to for everything from afternoon tea to special occasions. By 2007, word had travelled well beyond James St, with one visiting food writer sent across Brisbane in search of what colleagues called “the best cakes in Australia.”
2008: A NEW CHAPTER BEGINS
A changing of the guard arrives when Caitlin Gallagher and John Arba take the helm at Jocelyn’s Provisions. Already an important part of James St’s early fabric through foundational hospitality venues Vroom and Luxe, the pair brought deep hospitality experience and a shared belief in generous food, quality produce and doing things well.
2010s: BEYOND THE BAKERY COUNTER
Jocelyn’s grows into catering and bespoke production, cooking up custom creations for some very familiar names including Tiffany & Co., Louis Vuitton, Cartier, Mercedes-Benz, Audi, Lexus and Porsche.
2013: PUTTING THE ‘PROVISIONS’ TO WORK
By 2013, Jocelyn’s had introduced a new range of ready-to-go meals. The menu stretched from Navarin of spring lamb and Chinese duck noodle soup to French chicken casserole, mac and four cheese, Paris mash and spiced cauliflower, all made with the same commitment to quality whole ingredients and rejection of anything artificial.
2015: FAREWELL TO THE ORIGINAL HOME
After almost two decades tucked away in Shop 8 Centro on James, Jocelyn’s leaves its original home, making way for The Calile Hotel. Despite the change, Jocelyn’s remains on James St, shifting to two small temporary outposts. The first where Gelato Messina now resides and the second just across the street (where St Agni is today).
2016 – 2018: GROWING THE BUSINESS
With demand growing, Jocelyn’s turned momentum into expansion. Albion Fine Trades followed in 2016, housing the large production kitchen and second retail store, before Camp Hill opened in 2018 and took the business to a third Brisbane location.
While the business grew, Jocelyn’s saw the importance of giving back to the community, partnering with Ozharvest to provide a huge range of products to charities supporting people in need. The Jocelyn’s team takes great pride in this ongoing, long-standing charitable partnership as they know that their product is going to those in need and can often make someone’s day, especially when a cake is delivered on a birthday or special occasion.
2019: THE RETURN TO JAMES STREET
Jocelyn’s makes its long-awaited return to the neighbourhood where it all began. A new Ada Lane store beside The Calile places the business back in its James St spiritual home, just metres from where the story began more than two decades earlier.
2020: ADAPTING THE MODEL
Jocelyn’s enters 2020 in growth mode, opening on Eagle Street in Brisbane City just as COVID reshapes the way Brisbane eats. Rather than waiting it out, the business reworks its offering around the moment, introducing Take & Bake meals, baking kits and contactless delivery to bring Jocelyn’s into customers’ homes.
2022–2025: REBUILDING, THEN REBUILDING BIGGER
For the first time in 26 years, Jocelyn’s pauses all trade on James St and across its network of locations. Brisbane’s devastating 2022 floods impacted the Albion kitchen, resulting in a total production shutdown and closing every Jocelyn’s store for four months. The response was not to retreat, but to recommit, rebuilding from the ground up. By 2025, that recovery has turned back into growth, with a new store opening in Toowong.
2026: THIRTY YEARS OF JOCELYN’S
Three decades on and Jocelyn’s is celebrating their milestone birthday with a year-long roll out of celebrity collaborations, exclusive menu items, the release of archival recipes, and special giveaways.
The homegrown James St business has grown tenfold since 2006, from a team of 10 to over 100 employees, four locations and selling on average 7,000 of the beloved chocolate sour cream cakes per year!
Watch out for the next chapter, which is already taking a distinctly aerodynamic shape.
