Spring in Brisbane means two things worth dressing up for: racing and seafood.

For Derby Day, ESSA brings both to one long table, pairing the start of the four-day Melbourne Cup Carnival with a menu that leans into the season.

Doors open at 11AM with Champagne and caviar, before lunch begins at midday with appellation oysters, seafood and crudités on ice. From there, Moreton Bay bugs and wood-fired Murray cod take over, with chocolate crémeux and salted raspberry to finish.

A four-hour premium beverage package runs throughout the afternoon, spanning Champagne, wine, beer, cocktails and non-alcoholic pours.

At 3pm, the table clears and the celebration shifts next door to The Nixon Room for the after party.

As is customary, black and white is the sartorial brief, with a prize for best dressed.
